Yes, here?s a really great one which has 377 calories and 7g fat per serving. If that seems like a lot, I promise you this is really filling and helathy lunch which will hopefully take you all the way to your evening meal without the need for a snack. The portion size is generous too, so you can always shave it down a bit and adjust the calories accordingly. This recipe is for two lunch portions.

Ingredients

1 medium grilled cooked chicken breast
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup sliced mushrooms
1/2 cup canned beans, e.g. borlotti
1 teaspoon crushed garlic
Good handful chopped fresh basil
150g uncooked pasta (e.g. twists)
12.5g Parmesan cheese
Ground black pepper, to taste

To make

In a large, non-stick frying pan, heat the olive oil. add the onions and mushrooms and saut until tender, about 5 minutes. Stir in the white beans, garlic, basil and cooked chicken torn into strips.

Meanwhile cook and drain the pasta, add the chicken mixture and toss to mix evenly. Put in the fridge to cool. Sprinkle over the Parmesan when it's cold. Enjoy!
